- 2 tablespoons of olive oil.
- 1 medium onion, chopped.
- 2 carrots, sliced.
- 2 celery stalks, chopped.
- 2 garlic cloves, minced.
- 1 medium zucchini, chopped.
- 1 cup of white beans or chickpeas.
- 1 cup of chopped tomatoes.
- 1 cup of broth (vegetable or chicken broth).
- 1/2 cup of small pasta.
- 1 bay leaf.
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper.
- 1 tablespoon of fresh basil, chopped (optional).
- Parmesan cheese for garnish (optional).
Heat the olive oil in a large pot over medium heat.
Add the onion, carrots, and celery and sauté them for 5 minutes until they are tender.
