  • 2 tablespoons of olive oil.
  • 1 medium onion, chopped.
  • 2 carrots, sliced.
  • 2 celery stalks, chopped.
  • 2 garlic cloves, minced.
  • 1 medium zucchini, chopped.
  • 1 cup of white beans or chickpeas.
  • 1 cup of chopped tomatoes.
  • 1 cup of broth (vegetable or chicken broth).
  • 1/2 cup of small pasta.
  • 1 bay leaf.
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper.
  • 1 tablespoon of fresh basil, chopped (optional).
  • Parmesan cheese for garnish (optional).

Instructions
 

  • Heat the olive oil in a large pot over medium heat.

  • Add the onion, carrots, and celery and sauté them for 5 minutes until they are tender.

  • Add the garlic and zucchini and sauté for an additional 2 minutes until the garlic becomes fragrant.

  • Add the chopped tomatoes, beans or chickpeas, broth, and bay leaf. Bring the mixture to a boil.

  • Once it boils, reduce the heat and let the soup simmer for 20 minutes until all the ingredients are cooked through.

  • Add the small pasta and cook for an additional 10 minutes until the pasta is tender.
